Eggless Cashew nut Biscuits-Kaju Cookies Recipe

Cashew nut biscuits (Karachi bakery style cashew nuts biscuits) are very delicious and needs very less ingredients. These cashew nut biscuits/cookies are really easy to make and go perfect with a cup of tea. As it is kid's favorite, you can give it as after school snack or pack it in their snack box. Today we will learn how to make cashew nut biscuits following this easy recipe with step wise pictures.

Eggless Cashew nut Biscuits-Kaju Cookies

   Ingredients needed

   All purpose flour (maida) - 1 1/4 cup
   Granulated sugar - 1/2 cup
   Unsalted butter - 100 grams + 1 tbsp
   Coarsely ground cashew nuts - 1/2 cup
   Chopped cashew nuts - 1/4 cup
   Vanilla essence - 1/4 tsp
   Baking powder - 1/2 tsp

Preparation 

Powder sugar and keep it aside.

Sieve flour with baking powder twice and keep it aside.

Line a tray with parchment paper and keep it ready.

Pre-heat the oven at 170 degree C for 10 minutes before baking the cookies.

Keep all the ingredients ready. Butter should be at room temperature.

Method

Cream together butter and sugar until fluffy. I used an electric beater for this.

Add vanilla essence, coarsely ground cashew nuts and mix well.

Add flour and make a soft dough.

Eggless cashew nut biscuits

Wrap it nicely with cling wrap and keep it in the refrigerator for an hour.

After an hour 

Take the dough out and roll it using a rolling pin, dusting flour. The rolled out dough should not be too thin nor too thick.

If you find the mixture to be too crumbly, you may add a little milk. If it is too soft, you can refrigerate for more time.

Spread the chopped cashew nut on the rolled out dough and roll it slightly with the rolling  pin, so that the chopped cashews get embedded in the dough.

Using cookie cutter, cut into desired shapes.

Arrange it on a the parchment lined tray and bake in a pre-heat oven at 170 degree C for 10 minutes or until the edges starts to brown. I baked at 170 degree C for 8 minutes (bottom coil) and 3 minutes (both top and bottom coil) You have to keep an eye, if using both the coils as it might get burnt.

Remove cookies and place it on a wire rack to cool. The cookies will be a little soft once you remove from the oven but will be perfect once it cools.

Storage and shelf life 

Store it in an airtight container, if not eaten immediately. Stays good for 4-5 days.

This is also a naadan hotel.....u go there morning and  you get the delicious mouth watering appams ,egg curry,chicken curry, 
     duckroast etc.even though the ambience is  a bit dissapointing but it gives a old naadan hotels look!the appams are crispy the egg curry has a really good naadan taste and is not ,uch oily as you think.the chicken curry is really delicious and the chicken is soft and is well absorbed by the gravy.

THEY GIVE US ONE OF THE BEST NAADAN BIRIYANIS YOU  EVER HAVE!!I WENT THERE AND HAD PARAGON BIRIYANI,THE RICE IS SO SOFT,MOIST AND FLAVOURED WITH ONE OF THE BEST NAADAN SPICES!AND THE CHICKEN IS REALLY TENDER AND SOFT!

ALTHOUGH THEY HAVE PARAGON IN THREE FLOORS THE MOST DISAPOINTING THING IS THAT YOU HAVE TO WAIT FOR SOO LONG THAT PEOPLE GO AWAY DISSAPOINTED!!I HAVE ALSO HAD THEIR KERALA PAROTTAS AND WHEAT PAROTTAS ITS REALLY SOFT AND TASTY BUT ITS REALLY HEAVY ALSO.... THERE IS ONE SOUP WHICH IS SERVED OUT OF BREAD LIKE A BREAD BASKET AND SOUP INSIDE ITS REALLY GOOD!!

THESE WORDINGS WAS THE FIRST THING WHICH  STRUCK MY HEAD WHEN I GOT INTO THE WORLD ON YOUR PLATE AND I GUESS ITS ALWAYS TRUE!! WE ARE STUCK IN THE TIME WHERE PEOPLE WANT TO TRY SOMETHING NEW AND DIFFERENT....AND THIS RESTAURANT IS ONE OF MY FAVOURITES!!

 IN MY OPINION IF U WANNA TRY SOMETHING NEW THIS IS ONE OF THE BEST CUISINES YOU SHOULD TRY!!I HAVE TRIED THEIR PASTAS,LASAGNAS ,FISH AND CHIP,AND THEIR WONDERFUL DESERTS!!THEY HAVE A REALLY GOOD AMBIENCE AND SERVICE!!THEY HAVE DISPLAYED A COLLECTION OF CURRENCIES FROM DIFFERENT COUNTRIES IN THE WORLD!!THE PERSON WHO RUNS THIS PLACE WAS A CHEF AT QUEEN MARY 2(SHIP)FOR A LONG TIME.BALANCED BUDGET TOO.PEOPLE WHO HAVE A HUGE CRAVING FOR FOOD (LIKE ME)SHOULD CHECK OUT THIS PLACE!!!THEY HAVE OUTDOOR CATERING,CORPORATE CATERING AND HOSPITAL CATERING.BUT THE ONLY DISAPOINTING THING IS THAT IF YOU DONT GO EARLY THEN YOU WONT GET YOUR DESIRED FOOD!!:( IF YOU GO THERE I HIGHLY RECOMEND YOU TO TRY THEIR CONTINENTAL DISHES INSTEAD OF INDIAN EVEN THOUGH THEY ARE GOOD!! :)

How to make Biscuit Pudding (biscuit cake recipe)
its a warm evening and r u feeling to eat something good with tea?? well lets get ready to make a delicious no bake marie biscuit pudding!!its a really good recipe which also encourages kids to make something good and easy!!it is one of my no bake recipes eva!!and whenever i hav a friends birthday party this is wat i gift
!!

Prep time - under 15 mins
Cook time -Nil
Yields - a 7 inch square pan

Ingredients needed

Tea biscuits / Marie biscuits- 30 biscuits or as required
Unsalted Butter- 100 gms (at room temperature)
Icing sugar- 1 cup
Cocoa powder- 3 tbsp
Milk - approx 1 1/2 tbsp-2 tbsp
Vanilla extract- 1/2 tsp

Coffee/ Espresso powder- 1 1/2 tsp
Water- 1 cup

Preparation

Prepare coffee decoction in 1 cup of boiling water. Filter it and leave it to cool.

Sift the cocoa powder and keep it aside.

Line a 7 inch square cake tin with cling film leaving a little extra on one side to fold over the top. Alternatively you can layer the whole thing in a square pan or glass dish without the cling film, if you plan to serve it directly from the tin. But with the cling film lining, it is easier to take the whole biscuit cake out from the pan and slice it as preferred. 

Method

In a bowl, beat together butter and sugar until light and fluffy. You can use a wooden spatula or an electric hand mixer.

Add cocoa powder and continue beating until well mixed.
Add vanilla essence and mix well. Add milk little at a time and mix well. The consistency of the mixture should neither be stiff nor too watery. It should be easily spreadable, so adjust milk accordingly.Now dip the biscuit one at a time in coffee decoction and arrange it in the pan as shown in the picture below. It doesn't matter, if the biscuits overlap.
With a spatula, spread the butter + sugar +cocoa powder mixture over the biscuits evenly filling all the gaps and corners (see picture below). Repeat with another layer of biscuits dipped in coffee decoction and top it  with another layer of cream.Continue layering biscuits and cream alternatively until all the cream is over and the cream layer is the top most layer. (I got 3 layers)
Decorate it with chopped nuts or silver ball or sprinkles, cover it that extra cling film, press it gently and keep it in the refrigerator to set. 
When ready, lift the pudding out of the pan, unfold it and slice it into small pieces and serve immediately.

Note - The pudding will melt if kept outside for a long time. So keep it in the refrigerator and take it out only when required.

If you want it soft, keep it in the refrigerator to set. If you prefer it a little hard, keep it in the freezer compartment of the refrigerator. Both tasted great.UR NO BAKE PUDDING IS READY TO GO!!:)
